The first proposal is a delicate as a cloud cake with cream of two flavors - coffee and cream. The base of the cake is a sponge cake, but if you don't have much time you can buy a ready-made one. How to prepare the cake? You will need the following ingredients:

  • - espresso to soak the sponge cake
  • - 4 tablespoons of grated chocolate

Coffee mass

  • - 250 ml cream cheese
  • - 2 tablespoons instant coffee or cereal
  • - 2 teaspoons gelatin
  • - 1 tablespoon powdered sugar

Cream mass

  • - 250 ml of whipping cream
  • - 2 teaspoons gelatin
  • - 2 tablespoons powdered sugar

First prepare the espresso, preferably in a café or espresso machine. It is advisable to use an espresso machine capsules (e.g. Nespresso Essenza Mini), which will have an aromatic coffee ready in just a few moments. Cool the espresso, mix it with a bit of water and soak the sponge cake in this mixture. Then proceed with the preparation of the cream. Dissolve gelatin and coffee in 2 tablespoons of hot water and leave to cool. Whip the cream with the powdered sugar until fluffy, then slowly pour in the gelatin, whisking constantly. Prepare the cream mixture in a similar way, i.e. mix the cold cream with the powdered sugar and add the cooled gelatin. Put the coffee mass onto the sponge cake, then the cream mass and sprinkle with grated chocolate. Ready!

Cold Coffee Cake

This quick cold coffee cake is another delicious option that you can't resist. It is the perfect solution when you have little time to prepare dessert. This time the base of the cake will be cookies soaked in aromatic coffee. Here is the recipe for a quick coffee cake without baking!

  • cookies
  • 250 ml cream cheese
  • 250 g mascarpone cheese
  • 3 tablespoons coffee
  • 4 tablespoons powdered sugar
  • Espresso to soak the cookies
  • half a dark chocolate bar
  • 50 ml cream cheese

First, whip the cream cheese with mascarpone cheese and powdered sugar. Dissolve three tablespoons of coffee in two tablespoons of water, add to the cream mixture and mix for a while. Line the mold with baking paper and arrange the cookies soaked in espresso (you can dilute the coffee with a few tablespoons of water). Put the cream and again cover with soaked cookies. On the last layer of cream put the cookies, but without soaking in coffee. Put the cake in the fridge for an hour, leaving to set. After this time pour the cooled chocolate topping - just heat up the cream and melt the chocolate. You can decorate the cake with chocolate or coconut shavings. Quick coffee cake is ready!

Brownie is an extremely quick cake, which comes in at least a few versions. It tastes great and the smell of chocolate and coffee spreads all over your kitchen.   • dark chocolate bar
  • 4 large eggs
  • 2/3 cup wheat flour
  • 100 g butter
  • half a cup of ground coffee
  • 250 g sugar
  • half a cup of milk (optional)

In a large pot melt butter, add broken chocolate and heat until chocolate is melted. After this time add sugar, coffee and stir. Cool the mixture slightly and add one egg at a time, stirring gently. Then add flour and possibly add milk, if the mixture is too thick. Mix together and pour into a tin (e.g. 20cm x 20cm) lined with baking paper. Bake the cake for about 25 minutes at 180 degrees C (up and down). After baking the brownie should be firm and slightly moist inside. It can be additionally covered with chocolate glaze. Voilà!
