The hot way

Instead of ice water, we pour the salt with boiling water, add all the spices, boil a little and pour into the jars with cucumbers. For a week leave them open, then refill the brine and roll up.

Some tricks

  • Jars will 100% not explode if you add some mustard seeds to the brine.
  • Cucumbers will be mold-free on top if you add a couple of thin slices of horseradish root.
  • Add some oak bark to give the cucumbers a crunchy texture.

Ingredient list:

  • 1.3 l of water
  • Ketchup (the hotter the better)

  • 9% vinegar

  1. We cut the "bottoms" of cucumbers and pour ice water (the colder, the better) and leave for 8 hours (ideally).
  2. Put all the spices in the bottom of the jars.
  3. Add cucumbers and tomatoes as thickly as possible, but not too tightly.
  4. Bring the water to the boil, pour it over the cucumbers, cover and let it sit for about 20 minutes.
  5. Pour water back into the pot, bring to the boil and add ketchup.
  6. Pour the mixture on cucumbers, roll up and wait for the winter (not necessarily).

Ingredient list:

  • 3 kg of cucumbers
  • 1 litre of water
  • currant leaf - 4 pieces
  • 4 twigs of dill
  • 3 kg of cucumbers
  • 4 garlic cloves
  • pepper - 4-9 peppercorns
  • bay leaf - 3 leaves
  • clove sprigs
  • sugar - 2 tablespoons
  • 9% vinegar - ⅓ teaspoon per 3-liter jar
  • 2 clove sprigs


  1. Soak cucumbers for 3 hours in cold water, dry and trim off the bottoms.
  2. Put all the spices and leaves at the bottom of cleaned jars.
  3. As tightly as possible, but without pressure, we put cucumbers and pour boiling water over them for 20-25 minutes.
  4. For the brine: 1 tablespoon salt + 2 tablespoons sugar.
  5. Bring the brine to the boil and add ⅓ teaspoonful of vinegar.
  6. Fill cucumbers with brine, wrap and turn the jars upside down

Pickled cucumbers with honey

Ingredient List:

  • Small cucumbers - 2 kg
  • 1 horseradish leaf
  • 2 cherry leaves
  • 2-3 small inflorescences of dill
  • 3 garlic cloves
  • 9% vinegar - 100 ml
  • two small slices of hot pepper
  • 50 grams of bee honey
  • coarse salt - 50 grams
  • 1.5 liters of water

  4. Cover cucumbers with boiling water for 10-20 minutes.

  8. Pour the brine over the cucumbers, seal it and turn the jars upside down.

Pickled cucumbers recipe with red currant juice

Ingredient List:

  • 2 kg cucumbers (if the jar is 2 litres)
  • ½ litre of water and ½ litre of redcurrant juice
  • Spices, spices and sugar (a teaspoonful).
  • Add honey, garlic and vinegar.
  • 40-50 grams salt (depending on the size of the cucumbers themselves)
